The Weekly Burger: Buffalo Burger

There are several accounts as to the creation of the beloved buffalo wing. It is another one of those great culinary mysteries of our time. It is my firm belief that a particular story about a little place in Buffalo, NY called Anchor Bar is the true creator.

It was Oct 3, 1964 late at night when a woman named Teressa Belissimo, co-owner of the aforementioned bar had a group of young men come in, one of which was her son. With seemingly unquenchable thirst and insatiable appetite she needed an easy snack to appease the monstrous hunger of her new customers. It was at that point she was struck with culinary genius. Deep-fry a chicken wing! Those awful little buggers that are reserved for the trash bin or the stockpot, she could use them all to feed her hungry son and his friends! But she couldn’t just stop there. She whipped up a sauce that is so terrifically easy that the very recipe for it will melt your brains! Melt some butter and add some of her favorite hot sauce! While everything was frying, and melting, and getting ready to see the world, the boys where still hungry. The promise of a delicious snack to come was simply not enough to hold them. So, into the refrigerator she dove and come out with what now today almost always accompanies wings, celery and blue cheese dressing. Now, with the right imagination you can convert the delicious and simple idea of buffalo wings, into a delicious and simple burger.

Buffalo Burger
Makes three burgers

Ingredients:
1 pound ground buffalo, substitute beef if you want.
2 tablespoons butter
¼ cup of your favorite hot sauce
1 tablespoon garlic, finely chopped
¼ teaspoon celery seed crushed
Blue cheese salad dressing
¼ cup blue cheese crumbles (opt. substitute for the blue cheese dressing)

Equipment:
A sturdy pot that you can melt butter with. A grill or stove or whatever you may want to use to cook a burger. A bowl for dipping the finished burger patties in your wing sauce if you so choose. This is a very simple and very tasty burger.

Procedure:
Start by melting your two tablespoons of butter. Margarine CAN be substituted, but it is just not as good. Once it’s completely melted add in your hot sauce and whisk it together. It should be even in color, taste it, and add more hot sauce if you so choose. Set the sauce aside and get out your ground buffalo. Mix together the buffalo, garlic, and celery seed. Then, add in about half of your hot sauce mixture. Form the patties like normal by shaping them into a ball and then gently patting them down. If you are using the blue cheese crumbles instead of the blue cheese dressing, form six equal sized balls and then shape patties. Stuffing with the blue cheese, and then sealing the edges. Now, let them cook away, three to six minutes on each side. Once they are cooked to your liking, run them through a splash of the remaining wing sauce, and slap on some cheese, a bun, and some lettuce. Other options are crispy onions, and bacon. Enjoy!
