The Weekly Burger: That's-a Spicy Meatball

Something I crave from time to time is a delicious meatball sandwich. Complete the setup with some olives, garlic, mozzarella, and fresh tomato sauce. As I was mowing down on my most recent feast of the aforementioned sandwich, I had an epiphany. There is everything needed for a great burger here. So I got to work, whipped up a batch of meatball “batter” and started shaping up my tomato sauce. The inspiration was flowing and my taste buds were wet with anticipation. The creation is now known as: That’s-a Spicy Meatball Burger.

That’s-a Spicy Meatball Burger
Makes Four Burgers.

Ingredients:
1 pound ground beef
1/2 cup bread crumbs, any you like, the Japanese style still work incredibly well in this situation
1/4 cup onion
1 egg
1/2 tsp cayenne
3 cloves garlic, minced
2 tablespoons ketchup if desired

Sauce
1 pound ripe plum tomatoes
1 head garlic, rough chopped
3 tablespoons olive oil
1/2-1 teaspoon red pepper flakes
4 buns
4 tablespoons butter
1 tablespoon garlic, minced
8 ounces fresh grated mozzarella

Equipment:

All you need is a nice sized sauce pot for the tomato sauce, about an hours’ worth of time, and the craving for a delicious meatball burger.
Procedure:

Boil a pot of water, about a gallon. Slice an “X” in the bottom of all your tomatoes and dunk them into the boiling water for about 10-15 seconds. Pull out and immediately shock into some ice-cold water. Peel, seed, and chop.

Rough-chop your garlic, maybe 4-5 pieces per clove. Sauté in the olive oil until golden brown. Add the tomatoes and the rest of the ingredients for the sauce and cook for about an hour. About 40 minutes into the cooking time for your sauce, break out your meatball mixings.
Combine all the ingredients for the meatball patties and mix thoroughly.

Preheat your oven to 450 degrees. This step is entirely optional, but will make for an incredibly superior burger. Whip some softened butter (the 4 tablespoons) and the tablespoon of minced garlic together. Spread it over the middle sides of your burger buns and place open faced in your oven. Cook those for 5-10 minutes until golden and melty.

Cook up your burgers to your desired doneness. Sandwich between your garlic bread buns and top with 1/4 cup of tomato sauce and a healthy sprinkling of mozzarella, olives are optional. Dig in to a delicious sub-turned-burger.
